From my 2018 "International Late Night Hot Dogs" series originally for Giant Robot's 14th annual Post-It Show in LA.

Similar to (but not to be confused with) a NYC "Payapa Stand" dog, a true NYC dirty water dog is barebones, and comes from a street cart- best eaten next to a steaming subway vent.
