Celebrating the many forms of Italian-American Bakery Pizza known as "Tomato Pie" in Philadelphia and Central NY, or "Pizza Strips" in Rhode Island, and its many adjacent forms. Usually square, cheeseless (save a sprinkle of romano) and served cold, this regional delicacy shows up in old-school italian bakeries in pockets across the United States. Also included are mutant forms like Hazelton "PITZ", loaded with cheese, but like the others, served cold, and baked on a sheet at a bread bakery rather than a pizzeria.

This project is several months in the making, and really several years (decades??) of traveling, eating, writing about and researching the unique culinary tradition of cold, square Italian bakery pizza (and its adjacent forms) that reaches from Palermo to South Philly. Ships in 1-2 weeks!
